EASY PIZZA FOR TWO

Pizza Facile pour Deux SERVES 2

French ovens make the best pizza ever, giving them a marvelous crust. I make this pizza recipe for two, but you can also slice it into 6 pieces to serve with wine for a snack before dinner.

It couldn’t be easier. First, buy a ball of dough from your local pizza shop and tell them you want one for a small-size pizza. Take it home, cover it, and leave it on the counter until ready to use. Once you see how quick and easy this pizza is to make, you’ll want to make it again and again with whatever toppings you are in the mood for. I often make this with anchovies and oil-cured black olives, and after it comes out of the oven, I grate sharp Parmigiano-Reggiano all over the top.

In fact, pulling this together goes so quickly that you can remove the pizza to a cutting board, leave the oven on, fit in another disk of pizza dough, arrange toppings, cook it for 3 minutes on top of the stove, and pop it in the oven for another round that will be ready in 14 minutes.

SPECIAL EQUIPMENT BOX GRATER; 5-QUART (5-L) OR LARGER FRENCH OVEN

8 ounces (225 g) fresh mozzarella

3 tablespoons (45 ml) extra virgin olive oil

1⁄4 small onion, sliced very thinly

2 cloves garlic, pressed or minced

1⁄ 2 teaspoon salt

1 ball pizza dough for a small pizza purchased from your local pizza shop

4 tablespoons (60 ml) canned or bottled pizza sauce

1 heaping tablespoon herbes de Provence

8 fresh basil leaves, torn

3 ounces (90 g) prosciutto

3 ounces (90 g) Parmesan cheese

PREP

Preheat oven to 425° F (220° C). Grate half the mozzarella on the large holes of a box grater. Slice the rest into big pieces.

COOK

Heat the oil in the French oven over medium heat, toss in the onion, garlic, and salt, and cook until the onion slices are tender, about 6 minutes.

With a slotted spoon, scoop out the onion mixture to a plate and reserve, leaving the oil at the bottom. The onions and garlic will have flavored the oil and will flavor the underside of the pizza.

When the French oven is cooler and can be touched, place the pizza dough into the bottom over the oil, and stretch it out to fit, bringing up a slight rim around the sides.

Spread the pizza sauce over the dough and spoon on the cooked onions and garlic. Sprinkle with the herbes de Provence and basil, arrange slices of mozzarella and prosciutto all over, distribute the grated mozzarella, and then grate the Parmesan to finish.

Place the French oven on the stovetop, cover with its lid, and cook over medium high heat for 3 minutes.

Remove the lid, place in the oven, and bake for 14 minutes, until crisp and golden.

Remove the pizza from the oven. With a fork, gently coax up the edges then, with a spatula, lift the whole pizza to a cutting board. Slice and serve.

IDEAS AND SUGGESTIONS

Fry pepperoni slices in the oil, remove to a plate, and fit the pizza dough over the pepperoni-flavored oil in the French oven for an incredibly delicious crust. Use the pepperoni slices for the top of the pie.

Great mini cocotte recipes!

I purchased some Le Creuset mini cocottes and was disappointed that there wasn't a cookbook full of recipes. I found Hillary's cookbook and she not only has some great recipes for mini cocottes but many for cast iron and enameled cast iron cookware. She really pays homage to provincial French cooking and this cookbook is really one to have in your library if you love French cuisine and cast iron cooking. I've tried several of her recipes and have been happy with the delicious results. The Warm Mushroom Custards in mini cocottes with Garlic Bread was superb as well as One Pot Niçoise Pasta.
The recipes run the gamut of appetizers, stovetop, braising, baking, stewing, frying,jamming, drinks, and desserts. In addition, she explains about the different companies of cast iron cookware and how to take care of them.
Really excellent cookbook.

YES. BUY THE BOOK.

I bought this book for the cover. I had no idea what was in store for me. To my delight, this book, has some of the most delectable recipes and we now use them for our dinner parties. We found out straight away that we had to make as much as possible as people were no longer being polite and only taking their share. It was only luck that one person did not show up for dinner, as our guests, would have possibly poked each other with forks trying to get to the last bits.

Nice keeper

Love the pictures throughout. I'm a visually inspired cook. I like detail in how to prepare something. Most of the recipes are do-able for me. Others may not be, only because of my taste, but hey! I can always change my mind! I appreciate the detailed information about the cookware. I have vintage Descoware from Belgium as as other pieces and the author has done my homework for me!

Great ideas for refreshing pilgrimage of a child with God

Although this book is written by a group of educators it is one of the best books I have ever read on children's spirituality and show us with many examples how the faith community can nurture its youngest members. Children Matter emphasized relationships between people and encourages the church to welcome all children as valued participants in the people of God.

A wide range of examples from the Protestant traditions and drawing on the Bible, history and psychology to lay good foundations. The examples were excellent and evualated with strengths and weaknesses for all ages from toddler through grade school. The evidence of teaching is learning; how the children respond, the questions they ask, the attitudes they demonstrate in actual behavior and the way they use Scripture to inform their lives and decisions.

A wide ranges of examples were given from ancient times to the present. The book was exciting in the responses from the children. Anyone who works with children would find this an excellent tool, it has a great bibliography, footnotes, scripture list ---you couldn't ask for more.

It left me with a great sense of hope and urgency to give our teachers and parents great tools.

Imagine the faith journey with children as a pilgrimage or dance with God. Explore the contexts in which children live, make an informed and animated commitment to nurture a vibrant faith in your churchs youngest members. Everything I spent ten years learning about children's ministry, these authors have managed to boil down into a FANASTIC resource for church leaders and volunteers. This is an exceptional blending of theory and practice, covering both logistical and philosophical issues. If you want to read just one book about ministry to children, this is it!

Children Matter is a useful tool for church education committees to read and study together. It provides a broad overview of the componants of educational programing in a parish setting. It introduces aspects of educational ministry that lay persons need to develop an understanding and articulation of today's approach.

I would also reccomend it for college and seminary introduction courses.
